Among the popular winter vegetables in our diet, three products take pride of place: potatoes, cabbage, carrots. But, traditionally, our ancestors used to use completely different products, mainly turnips, hemp oil and, oddly enough, burdock root.
In Europe, the most common supermarkets sell burdock root, kohlrabi and really sweet turnips. In Asia, where ordinary potatoes have not taken root, thank the rice, salads are planted from fresh burdock root and are not even surprised at this fact. In Switzerland, turnips are boiled for lunch and are very surprised when Russian tourists ask: what are you eating this with?
And our turnip remained only in fairy tales and proverbs (“simpler than a steamed turnip,” that's what they say in our culture, and not in China, for example), but we don't even know its taste. What lies in our hypermarkets, dirty and forgotten, believe me, this is not a turnip, this is a hybrid of a hard elephant heel. Turnips should be juicy, sweet and flavorful! In a sense, it is reminiscent of the culture that is now reviving among summer residents - kohlrabi.
It was in our tradition that burdock root was served for the first and second, and instead of bread. Yes, it was that and not so long ago, some hundreds of years ago. Such knowledge is lost. We don't even know what this root looks like, with the rare exception of professional herbalists.
But our ancestors lived for a long time and did not get sick precisely because they ate medicinal products every day. Turnip for bones, burdock for everything - it even cures hepatitis (!), Pine nuts instead of milk, Old Believers still call it bread, we won't even mention hemp oil.
So let's add some variety to our diet and try to cook something traditional and healthy.
Burdock Root Salad:
Since the burdock root tastes something tender, juicy, at the same time crunchy and slightly smelling of medicinal herbs, there can be a lot of recipes and fresh root.
Carrots taste much rougher in comparison. Hence my personal recommendations, if you are using carrots, then lightly marinate them before adding to the salad with burdock root.
It will go well with it - apple, celery stalk, cucumber, grated ginger, kohlrabi.
My version:
- Burdock root - 7-8 large roots, peeled
- Apple - 1
- Cucumber - half as much as burdock root
- Lettuce leaves - for putting the finished dish on them
- Goji berries to taste
- Lemon juice - 1 tablespoon
Useful mayonnaise made from raw herbal ingredients to it:
- Almonds or cashews - 1 cup, pre-soak
- Lemon juice - about half
- Honey - 1 dessert spoon
- 1 clove of garlic
- Sea salt optional
- Water - a sufficient amount for the consistency of sour cream
- If you want something spicy, add a little ground white mustard seeds.
Making burdock salad:
Peel the burdock root. This is easy to do with a potato peel. Rinse it off the remnants of the earth.
Then cut it into comfortable slices, like the Korean carrots, or as desired. Add to bowl, drizzle with lemon.
Cut the cucumber and apple in the same manner. Add goji berries. You can soak them slightly before that in orange juice, I like crunchy, I skip this moment. To mix everything.
In a blender, bring all the ingredients for the mayonnaise until smooth. It should turn out like real mayonnaise, only tastier.
Put the salad leaves on a plate, then the prepared salad and serve with mayonnaise sauce.
The healing properties of burdock

We had no shoes during the war. It's already freezing cold, and we all go barefoot. Sometimes they caught cold, the temperature rose. Mom will give us burdock root and linden flowers, she will wrap us up warmly. We will sweat, and we have no temperature.

We baked bread from these roots, cooked porridge, made dressings.
Soup and salads were prepared from young burdock leaves. The root itself was fried, baked, and made into coffee. When they treat me to coffee at a party, I drink and think: is this coffee! Coffee should be made from the roots of chicory, burdock and wheatgrass. Mom made such coffee - it was simply unmatched!
In my practice, there was a case: I treated one priest in Sergiev Posad, who had large spinal hernias. He was supposed to undergo an operation by medical luminaries in Moscow. I told him: "Let your luminaries wait one month." He drank a tincture of roots, a month later I saw him: he walked freely from the car to me and said: "I don't have any hernias!"
How to prepare a medicine from the roots?
The most valuable roots are in early spring, but they can also be dug in autumn. Burdock is a biennial plant. You should dig out a one-year-old burdock, which has young leaves - this root is very strong. A burdock with dry leaves and burdocks is already useless, he gave all his strength to flowering. You can collect burdocks from him, insist and rinse aching teeth - it will relieve pain.
 Dig up the roots, wash, dry. Burdock root is thick, so it needs to be chopped up. Pour one tablespoon of dry crushed roots with two glasses of boiling water. Boil for ten minutes. Insist for two hours. Strain and drink half a glass three times a day 10-15 minutes before meals. When you drink a medicinal infusion before meals, the blood immediately absorbs it and carries it throughout the body. You can drink a collection of burdock, wheatgrass and dandelion roots in equal proportions or one root at a time: a week - burdock, a week - dandelion, a week - wheatgrass.
